Recipe: Country Lemon Tarragon Chicken

This is a lovely dish fragrant with the scents of lemon and tarragon, I love it with creamy mash but it works equally well with rice or some crusty bread and a crisp green salad.
Ingredients 
2 tablespoons olive oil
4 chicken thighs or drumsticks
4 tablespoons lemon juice
150 ml white wine
3 cloves garlic, peeled and cut in half
salt and black pepper
1 tablespoon roughly chopped fresh tarragon, plus a little extra to serve
1 tablespoon dijon mustard
4 tablespoons cream
1.) Heat a frying pan over a med – high heat and add the oil
2.) Add the chicken pieces and fry until brown on all sides
3.) Add the wine and lemon juice, be careful as it may spit
4.) Add the garlic, salt and pepper and mix well
5.) Immediately turn the heat to low and loosely cover the pan with foil
6.) Cook for 20 minutes or until the chicken is cooked through, you can test it is done by sticking a sharp knife into the thickest part of the flesh and see if the juices run clear
7.) Stir in the cream, mustard and tarragon and heat through
8.) Serve sprinkled with some more tarragon leaves
